Pro max = hot version of conventional two stroke.
Solid mounts, a bit higher reving, hi per gearcase, lighter weight
Still has oil injection
Most are 225s, but there were Pro Max versions of the 150 and 200 for a while.

Optimax = direct injected
heavier, better fuel econony, reduced emissions vs conventional two stroke.
You can read more on the Mercury website about how wonderful it is (and I'm not being ironic)

The early Optis had some expensive issues....

I considered both when I bought my 225PM, but I was told it would be a LOT less expensive to fix than the Opti when things go south.

When a few of us ran down the river at the rally (kind of quick), I maybe used half the fuel with my Opti vs all the PM's, and I kept up.

Half the fuel? I get about 4.5 MPG cruising at 50-55MPH (even turning a 24" prop), and I can only assume the hull on my old gal isn't as efficient as the 2003 variations. Maybe the PM's get thirstier by comparison in the upper RPM ranges, but I wouldn't think the percentages between the two would change that much.

Maybe not double then. I get 7+ up to about 65. The XS was originally developed as an endurance motor in the late 90's sometime.

Pro Max = 2.5 liter
Optimax = 3.0 liter

Completely different motors.

What kind of speed do you get with your 200 ?
I've seen 87 with my 27 trophy when it was cooler out. I didn't test any other props then unfortunately. I think 89 is doable with my setup.
